How To Make Tortillas

Feeling inspired this afternoon I ventured over to Pinterest in hopes of finding an easy DIY bread recipe. After getting sucked into the vortex that is Pinterest I found a few that may work – now I just need a bread maker. If you follow me on Instagram you’ll know I love a good spelt wrap, in fact I eat one if not 2 per day. At $5.99 a pack they can get pricey so I thought I’d attempt to make my own.

DIY Tortillas

These are hot off the stove so I’m going to guess they taste best day of, however, if you let them cool properly they should keep in the fridge for a few days! You’ll need only 4 ingredients for these! Here’s a quick video so you can get an idea of the process….


  1. 3 Cups Flour – I used Spelt
  2. 1/4 Cup Oil (olive oil or coconut oil)
  3. 3/4 Cup Cold water
  4. 1 tsp sea salt


  1. Combine all ingredients in a large mixing bowl. Mix well with a fork, then switch to your hands when dough gets thicker.
  2. Separate the dough in half, then make 4 balls from each half.
  3. Sprinkle a little flour on your clean counter and roll out each ball – use a rolling pin or your hands. Keep other balls in a covered mixing bowl.
  4. Place in a frying pan (non-stick) and cook for 30-45 seconds per side, you’ll be making on tortilla at a time.
  5. As they are ready place them on a damp cloth and keep them covered.
  6. Repeat the process and keep adding to your stack!

If you want to get creative you could add some spices in and make flavoured ones! These are a little more fragile than the store bought ones but go easy on the fillings and you should be just fine! For crispier chips, bake in the oven after cooking and use them for a base of a taco salad or for dipping!

Struggling To Write

Yikes – almost a week since I’ve posted here! My teaching schedule is picking up and we’re busy making memories which isn’t leaving me much time to post here!  I’m struggling with what direction to take this little blog in so thank you for sticking around while I sort it out! Jumping Waves

A while back I remember posting about missing Sullivan’s first swimming lesson, sending my mom in my place, because I was too unfortable in my body to be in a bathing suit. It was one of the many moments I missed during their early childhood because I let my weight hold me back. This was the first vacation where I was comfortable in my skin, and wasn’t worried what people were thinking about me. It let me enjoy the moments as they came. It allowed me to be free. During one of our first trips to the beach Sully wanted to wave jump, in the past I would have let someone else take him so I could “take pictures”, this time we just jumped right in, shorts and all and someone else was finally the picture taker!

I felt free to enjoy myself and let go of perceptions I had/have about my body, it was pretty darn awesome. This journey of weight loss and health isn’t an easy one, but if you stick it out it’s worth it! As the weight starts to drop off our bodies, we become lighter in many ways. I’ve talked before about “Finding Your WHY”, for one of the first times since reaching my goal, I’ve gotten to fully enjoy and LIVE my WHY!



For the first time in pretty much ever, there is a picture of my booty that I don’t hate! Heck, I’m even sharing it here on the interwebs! Normally I’d scroll through the camera a delete all the “bad” photos, this time instead of deleting them, I’m actually able to be happy with them and share them!

FRESH Light Lunch or Snack Idea

Vacation doesn’t have to be about blowing your good eating habits out of the water, sure we may enjoy a few fresh baked chickpea cookies or some ice cream, afterall vacation is about letting go and relaxing. The kids and I were away for 2 weeks and only 1 meal was eaten at a restaurant (blackened fish – amazing!). Normally I don’t eat lunch meat – when I do I like to make sure it’s top quality. There’s no denying it’s a quick, healthy and delicious snack so I happily snacked away while on vacation. You’ve all likley seen my DIY Alfalfa Sprouts I love to eat so much, but I couldn’t exactly bring all my sprouting grear on vacay with me. I was beyond excited when I found fresh sprouts in the store and for only $1.99 (about a pint size).

Quick Easy Snack Ideas

We were shopping at Publix and they have the Boar’s Head line which I love! First I started with the Everroast Chicken and Chipotle hummus with my fresh sprouts – so so tasty! After I finished the chicken I went back a few days later and tried the no salt added roasted turkey breast – amazing!! The meat was about $10/lb so pretty cost effective when you consider it can last a few days!

So just remember, being on vacation doesn’t have to mean the end of clean eating! Keep it EASY & SIMPLE & FRESH!! Bonus – NO Dishes!

Gone Fishin’

Hello Beautiful Friends! The kiddos and I are taking off for a nice vacation for the next two weeks! I’ll try and post here on the blog but can’t promise anything new! Vacation is all about creating memories – not about blogging them! We’re leaving the hubs and dog back home to tackle the “honey-do” list! Sexy Summer Arms Workout

Working on my arms has to be one of my favorite things. Love how quickly you see changes! One thing I have learned lately is you don’t need to lift super super heavy to build and/or retain your muscle. Just remember there is always more than one way to achieve results – do what works for YOUR body!! Friday mornings are made for headphones with great tunes and lots of lifting. I got into a groove the other day and it turned out awesome! See below for what my sets looked like.


Be sure to include a dynamic workout of 5-10 minutes before you begin your lifting session. Complete this routine 2-3 times, if proper form allows, completing 12-15 reps of each exercise. If your form is beginning to suffer be sure to decrease weight or simply stop at 2 sets.

  • Regular Fly
  • Front Raise
  • Side Raise
  • Bicep Curl
  • Tricep Dips
  • Bent Over Row w/ Barbel or 2 dubmbells
  • Overhead Press
  • “The Princess Wave”: with arms in the starting position of the overhead press keep one arm bent at 90 while holding the dumbell. Slowly rotate the other arm down maintaining the bend in the elbow, slowly rotate back up to starting position.

Once I finished my sets I topped off the workout with some BOSU push-ups and some BOSU Jackknife crunches.
