Chickpea Peanut Butter Chocolate Chip Cookies

My first foray into chickpea baking was a horrible fail – I attempted an apple crisp – my family insisted it wasn’t “that bad” but honestly it was horrible! When I saw this recipe come across my facebook feed on Saturday morning I was skeptical but had a craving for cookies and these would be guilt free so as I was making pancakes I was also baking cookies – watch out Martha! In this case the poster had taken the recipe and posted without giving credit to the original creator which just isn’t cool. Chickpea Peanut Butter Cookies

I actually followed the recipe to the letter which is rare for me. I wanted to make sure they were good before I started messing with substitions! I;m thinking of using sunflower seed butter to make them nut-free and school safe as the kids LOVED them! They were perfectly chewy and delicious and it’s taking all the strength I have not to make (and eat) another batch right now! My DietBet ends tomorrow (I’m SO close to my goal!!) so that’s keeping me in check – perhaps a celebratory batch of cookies!!
