Let’s Talk About Fudge Baby!

So let’s face it – no matter how healthy I become, how “clean” I eat, I will always have a sweet tooth. The only solution I can find to this problem is to create goodies that fall within the lifestyle I have chosen. A couple weeks ago I had a craving for something and I came across a recipe for “Paleo Mint Chocolate Almond Butter Fudge“. Needless to say they had me at “mint chocolate”. I just happened to have everything on hand so I whipped up a batch, froze it and then portioned it all out and kept it in the freezer. I was successful at not eating the entire batch in a day – it actually lasted a couple weeks! Around that same time my first order of PB2 had just arrived and I was looking for things to create with it. I used this fudge recipe as a base and then subbed in my own ingredients to make “Peanut Butter Toffee Protein Fudge”!

Protein FudgeIngredients:

  • PB2, 12 Tbsp (reconstituted)
  • Nutiva / Tropical Tradition – Coconut Oil, Organic Extra Virgin / Mjlk, 5.33 tbsp
  • Pc Organics (Canada) – 100% Pure Maple Syrup, 8 tbsp
  • Dymatize – Elite Whey Protein Isolate – Butter Cream Toffee Mix, 1.46 scoop (about 1/2 cup)


  1. Measure out 12tbsp of PB2 and add 6tbsp of water to reconsitiute it
  2. Add in melted coconut oil & maple syrup
  3. Add in protein powder
  4. Mix well by hand or in a KitchenAid mixer
  5. Spread fudge mixture into brownie pan or Silicone Mold ( lined my pan with wax paper to make freezing and cutting easier)
  6. Place pan/mold into freezer and freeze for 24-48hrs (yes that long!)
  7. Use a pizza cutter to cut into 16 servings. Wrap each in plastic wrap and place back in freezer
  8. Keep frozen – it melts quickly.

I left mine in the freezer for a few days before trying it. It takes WAY longer than the Chocolate Mint version to set-up, but it’s worth it!
