Sweet N' Nutty Granola

Today I went on a hunt for a granola recipe. It’s not paleo, but it is clean and even vegan. It’s mainly for Kevin’s snacks and I made some for gifts too. My first batch was a happy accident  – I put in the chocolate too soon and it melted…thus Chocolate Granola!

Here’s the run down of the ingredients:

  • 3 Cups of old fashioned rolled oats
  • 3/4 Cup almonds
  • 3/4 Cup cashews
  • 1/4 Cup Flax seed
  • 2/3 Cup unsweetened coconut flakes
  • 1 teaspoon cinnamon
  • 1/3 Cup coconut oil (melted)
  • 1 Cup organic pure maple syrup
  • 1/2 teaspoon sea salt
  • 1 teaspoon organic vanilla extract
  • 1 Cup Enjoy Life Chocolate Chips

Pre-heat the oven to 350. Combine all everything in a bowl – EXCEPT THE CHOCOLATE. Line the baking tray with parchment paper and then spread the mixture out evenly. Make sure to stir it around every 8-10 minutes to prevent it from burning. I used this recipe as my base but of course I had to swap up something!

Let the mixture cool for 1-2 hours and then add in your chocolate chips!

Kev was super happy about my little mistake. He loves chocolate anything. After it cooled I placed into a glass jar and put in the pantry. It’s great for breakfast, snacks, and as I’m sure he’ll enjoy it – on top of ice cream!

I had to figure out the caloric count here – mostly to keep myself from eating heaping portions! Portion how you like and then divide the total calories by your number of portions!
