Paleo Sweet Potato Browine {Like Heaven}

Tomorrow we’re celebrating my brother-in-laws birthday and I wanted to be able to join the festivities and stick to my paleo choices. My {future} sister-in-law is also gluten-free so I was looking for something the both of us could eat! I’m working on a “Meetza” for our lunch and wanted to have a cake/dessert we could enjoy too! Oh – it all has to be nut free too as my nephew has a peanut allergy – so I had to get creative! I went searching Google and found 2 great recipes I used for inspiration here and here. I used these recipes as a base and of course messed up and thus this happy accident was born. Maybe one day I’ll have the baking smarts to create these wonderful things without using a base/inspiration recipe!

Paleo Sweet Potato Brownie

I’ve had many brownies in my day – many! However, this one is like nothing I’ve ever tasted! Normally I make Kevin be my taste tester and I don’t tell him what’s in things before he eats – tonight he cheated and saw “sweet potato” and he replied “ewww”. When I served his up (with out the frosting in the photo) he replied “Oh you’re going to be pleasantly surprised!”. I chose to add a little cashew butter on mine as I LOVE it and add it to pretty much anything I can. My two favorite toppings are Frank’s Red Hot Sauce and Cashew Butter!

Here’s how to make this awesome Paleo Sweet Potato Brownie (Serves 8):

  1. 2 Medium Sweet Potato (Organic)
  2. 4 Eggs (Organic – Free Range) – beat lightly *EDIT: YOU CAN MAKE THIS WITH 2 EGGS AND IT’S THE SAME!!*
  3. 1/4 Cup melted coconut oil
  4. 1/3 Cup agave or raw honey
  5. 1 Cup Enjoy Life Chocolate Chunks ( Canadian – go the Bulk Barn) (can reduce this to 1/2 cup if you like)
  6. 3 Tbsp coconut flour
  7. 4 Tbsp organic coco powder (unsweetened)
  8. 1/4 Tsp baking powder
  9. 1/4 Tsp organic vanilla extract
  10. 1/4 Tsp cinnamon

How Do You Prepare These Goodies?

Sweet Potato Mash

1. Bake sweet potato at 425 for about 30-40 minutes | 2. Remove skin and mash both potatoes in a bowl.

  1. Bake sweet potatoes at 425 for 30-40 minutes, then remove skin and mash in your mixing bowl
  2. Beat eggs lightly and then add all wet ingredients
  3. Add dry ingredients and mix well
  4. Pour into baking dish (I used a 9×9 pan)
  5. Bake at 325 for 30-40 minutes
  6. Cool and portion. Top with Cashew butter if you like or enjoy without!

Cut into 8 equal servings and try not to eat all 8 servings. I’ve managed to stick to my 1 serving tonight = WIN! Like I said I topped with cashew butter ’cause that’s how I roll but they are equally delicious with out the added nut butter!

    • I’ve been using it in my baking recently and it’s pretty good. No real coconut taste to the goodies either which is great! I’m loving it!

    • I think so. It was AMAZING, I’m trying to restrain myself from making another pan and stress eating the entire thing!
